Mini Custard Apple Cheesecake

Scrumptious bite sized desserts, perfect for any occasion.
- 6 granita biscuits
- 250g cream cheese
- 1/3 cup caster sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 large custard apple
Preheat oven to 180°C. Line 6 large muffin pans with paper cases. Place a granita biscuit into each.
Beat cream cheese, caster sugar and vanilla until creamy. Add 2 eggs, beating well after each addition.
Halve custard apple and scoop flesh into a bowl. Remove seeds, mash flesh and into cream cheese mixture.
Spoon mixture over biscuits. Bake for 20 minutes.
Cool for 10 minutes then refrigerate for 1 hour.
